Paiche is a firm white flesh fish with similar qualities to that of Chilean sea bass and halibut. When seared a wonderful crust develops on this fish. Its mild flavor profile works well with a wide range of seasonings. Paiche can be prepared in any manner you would use for any other firm white fish.
Paiche are removed from the ponds and transported live in clear water tanks under strict temperature control to the processing facility. They undergo a resting period in the containers to reduce stress. The paiche then is harvested, eviscerated, cut, frozen and packed. The production process is carried out by a highly trained staff. The production is monitored and inspected under HACCP guidelines and good manufacturing processes.
